I never would have thought to call it an "anthology" approach, but in my solo shows this has been exactly my tack. One theme will hold consistent for the 30-36 pieces, but otherwise, variety is the key. Not all color, not all black-and-white; a mix of literal and abstract, standard and macro, traditional and painterly. I even vary the printed size, although that more naturally follows the "demands" of any given piece. For me, there is the personal stake, as you note, of not losing a whole swath of viewers. For me AND the gallery or sponsor, there is the financial benefit of having, within limits, something for everyone. As long as I enjoy the challenge and creative process in a variety of approaches, it's a win-win.
